Karen Austin
Karen began to cook when she started to travel, kitchens having a universal language. She settled at Lettercollum House, Timoleague West Cork where with her partner Con McLoughlin she established a restaurant and guesthouse.
Dorothee Clarke
Dorothee Clarke teaches vegetarian wholefood and Macrobiotic cookery. She moved to Ireland from Normandy in 1979 and cooked in Lios Dana Natural Living Centre, Inch, Co. Kerry, from 1986 to 1991 while studying Shiatsu Massage, Macrobiotic Cooking and Yoga. She has been teaching in Cork for the past 8 years. Her next Course 1 starts on 28th. September to 2nd. Alison Kingston
Alison Kingston graduated with a BA Honours in Exercise and Health studies in 2007. She is currently completing her study of a diploma in Nutritional Therapy with The Institute of Complementary and Integrated Medicine (ICIM).
Con McLoughlin
Con McLoughlin has a diploma in Nutritional Threapy from the Irish Institute of Nutrition and Health and is a member of the Nutritional Therapists of Ireland (NTOI) and the British Association for Applied Nutrition and Nutritional Therapy (BANT). He has a background in science from UCD and as a chef for 30 years working in Belgium and subsequently in Ireland including the award winning Lettercollum House Restaurant in Timoleague. He now divides his time between the shop in Clonakilty, his Nutritional Therapy practice and, with his wife Karen Austin, running cooking classes and cooking holidays in France and Spain.
